PROSPECTS AND OPPORTUNITIES
Moving from full-service to fast casual concept
In Japan, "family restaurants" have traditionally been casual dining establishments catering for a wide range of customers, particularly families with children. However, as the industry faces stagnation, there has been a noticeable shift towards the fast casual dining model.
Alleviating workforce shortages with digitalisation
As consumer foodservice in Japan gradually recovers and life returns to normal, significant challenges remain, particularly due to a labour shortage stemming from the country's declining population. The rising costs of production are also expected to hinder potential growth, resulting in a lower frequency of dining out compared to pre-pandemic levels.
Collaborations key to attracting Japanese consumers
In Japan, collaboration has become a popular strategy across various industries, including full-service restaurants, to captivate consumers. Many restaurants are forming partnerships with beloved anime and manga franchises to draw in customers.

Full-Service Restaurants
FSR (full-service restaurants) encompasses all sit-down establishments where the focus is on food rather than on drink. FSR is characterized by table service and a relatively higher quality of food compared to quick-service units. Menus offer multiple selections and may include breakfast, lunch and dinner. Preparation of food products is often complex and involves multiple steps. NOTE: restaurants types catalogued in this segment refer to table-service only (outlets with a proper “full table service:” wait staff attending customers and taking orders at the tables). Outlets with “limited table service” are excluded from FSR. For example: outlets where customers order their food at the counter are excluded (even though the waiter will then bring the food at the table).
