COMPETITIVE LANDSCAPE
Van der Valk remains the largest player, gaining share in 2025
Van der Valk is the leading operator of full-service restaurants within the Netherlands. The company maintains a robust network of large-scale European dining establishments, most of which are affiliated with its hotels and resorts.
Gustoso Gruppo invests in expansion of its ’t Zusje chain
Gustoso Gruppe also achieved strong growth in 2025 with its ’t Zusje restaurant chain. The company took over this chain the year before and has invested in expanding the number of outlets.
Long-term growth for chains, but independents dominate
Although chained full-service restaurants experienced growth, increasing the total number of outlets and RSP in 2025, independent full-service restaurants remain the most common type of restaurant in the Netherlands. Reasons for the dominance of independents include a strong local dining culture and consumer preference for a unique, non-standardised restaurant experience.

Full-Service Restaurants
FSR (full-service restaurants) encompasses all sit-down establishments where the focus is on food rather than on drink. FSR is characterized by table service and a relatively higher quality of food compared to quick-service units. Menus offer multiple selections and may include breakfast, lunch and dinner. Preparation of food products is often complex and involves multiple steps. NOTE: restaurants types catalogued in this segment refer to table-service only (outlets with a proper “full table service:” wait staff attending customers and taking orders at the tables). Outlets with “limited table service” are excluded from FSR. For example: outlets where customers order their food at the counter are excluded (even though the waiter will then bring the food at the table).
